These Broccoli Fritters offer a fun and flavorful twist on a simple vegetable. Grated broccoli is combined with cheese and a touch of flour to create golden brown patties with a satisfyingly crisp exterior. The accompanying creamy sauce, made with feta, Greek yogurt, and a hint of tahini and lemon, adds a tangy and refreshing counterpoint to the savory fritters. Ingredients
3 cups grated broccoli (food processor with grater attachment works best)
1 egg and 1 egg yolk
1/3 cup flour
1/2 cup shredded monterey jack cheese
1 tsp salt
1/2 tsp pepper
2 T olive oil
1/4 cup feta
1/2 cup plain greek yogurt
2 garlic cloves, smashed
1 T lemon juice
1/2 T tahini
Preparation
Step 1
Combine the shredded broccoli, eggs, flour, cheese, salt and pepper. Form into 8 patties. Let chill in the refrigerator for 30 minutes.
Step 2
Blend the feta, yogurt, garlic, lemon juice and tahini, until smooth, Salt to taste. Let chill
Step 3
Fry patties over medium/high heat for 3 mins each side until starts to brown. Serve with yogurt, feta sauce.
