About the Recipe

This Roasted Fruit Sorbet recipe offers a unique twist on a classic frozen treat. Roasting the frozen fruit before blending brings out a deeper, more concentrated sweetness and adds a subtle caramelized note. The addition of lemon or lime juice and zest provides a bright and tangy counterpoint. Whether you have berries, peaches, or mango in your freezer, this versatile recipe allows you to create a delicious and refreshing sorbet with minimal effort, even without an ice cream maker.

Ingredients

  • 16 oz frozen fruit of your choice

  • 1 cup sugar

  • 2 cups sugar

  • juice and zest of one lemon or lime


Preparation

Step 1


Preheat oven to 275. Spread frozen fruit in single layer on cookie sheet. Roast 30-40 minutes (if the fruit has a higher water content go with 30 minutes). Stir once, mid roast. Let cool.



Step 2


Dissolve sugar in water over low heat. Let cool. Stir in zest and juice.



Step 3


Blend cooled sugar mixture and roasted fruit in blender until smooth.


Step 4


Churn in ice cream maker for 40 mins. If you don't have an ice cream maker, pour mixture in 8"-9" glass dish and freeze; raking with a fork every 15 minutes.
