Ingredients
1 cup flour
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 cup rolled oats
1 cup rice crispies
1/2 cup flaked coconut
1/3 cup dried apricots, chopped
Preparation
Step 1
Preheat oven to 350. Mix flour, baking soda, baking powder and salt. Set aside. Cream butter and sugars. Add the vanilla and egg and beat well. Slowly add the flour mixture. Once well combined still in the oats, crispies, coconut and apricots.
Step 2
Make balls the size of a walnut, flatten with hand on a prepared sheet pan. Bake for 8-10 minutes. Let cool on a cooling rack, if possible.
