Ingredients
2 1/2 cups all purpose flour
1/2 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup buttermilk
1/2 cup melted butter
2 eggs
1/2 cup fresh lemon juice
Zest of 2 lemons
1 tsp vanilla
1/3 cup lemon juice
3 T sugar
1 T lemon zest
Preparation
Step 1
Preheat oven 350. Lightly grease or line a muffin pan.
Step 2
Combine the flour, sugar, baking powder, baking soda, and salt. In a smaller bowl whisk together the buttermilk, melted butter, eggs, lemon juice, zest and lemon. Mix with wet with the dry just until combined.
Step 3
Spoon into prepared muffin pan. Bake for 15-20 minutes until a toothpick placed in, comes out clean.
Step 4
Combine lemon juice, sugar and zest and heat over med-low heat until the sugar dissolves. While muffins are cooling on a cooling rack; pour some of the lemon mixture over the center of each muffin.
