This Salsa Verde recipe delivers a bright and flavorful punch. Roasting the tomatillos, serrano peppers, and onion brings out their sweetness and adds a subtle smoky depth. Ingredients
5-6 tomatillos
2-3 serrano peppers
1 med white onion
5 roasted garlic cloves
1 bunch cilantro
1 T honey
3 limes, juice and zest
1/2 cup water
salt to taste
Preparation
Step 1
Preheat oven to 400.. Place the tomatillos, the peppers, and the onion (cut in half) on a sheet pan. Wrap a head of garlic in a small foil purse, drizzle with some olive oil and place on the sheet pan. Roast for 25 minutes until everything begins to brown. Let cool
Step 2
Combine cooled vegetables, in a food processor or blender (for a smoother salsa) with the rest of the ingredients. Process until smooth.
